Cheesy Potatoes & Green Beans

Ok, here are the receipes for the stuff I made this weekend. Credit for the Cheesy Potatoes goes to my mom and the green beans I made up, but do have to give Meg credit to introducing me to the shallots. Enjoy!

Cheesy Potatoes:

8-10 potatoes, washed
1/2 loaf velveeta
2/3 stick butter
2-3 strips bacon
1c cheddar, grated

Slice potatoes thinly. Layer bottom of a 9×13 pan with 1/3 of the potatoes. Cut velveeta into slices and place on top of potatoes. Add some salt and pepper. Cover the velveeta with another 1/3 of the potatoes. Cut strips of bacon in half and space them out on top of the potatoes. Cover the bacon with the final 1/3 of the potatoes. Melt butter then pour over the potatoes. Add salt and pepper to taste. Finally, add a layer of grated cheddar on top. Cover and bake at 375 for approximatly 60 minutes or until potatoes are soft and cheese is bubbling.

Green beans:
2-3 Shallots
1-2 cloves of garlic
1lb green beans
Olive oil

Dice the shallots and garlic. Sautee in olive oil until garlic begins to brown. Add salt and pepper to taste. Add approximatly 1c of water and the green beans. Reduce heat, cover and simmer until beans have reached the level of softness you prefer or until the water has boiled off.
